One of the most dear summer morning sights in Greece is to watch Greeks of all ages , from kids on bikes to old men on sticks, walking to the corner bakery to buy their daily bread. You can indeed find many varieties in modern greek bakeries, some plain and some healthy, some extravagant and some lean or made with special flours or seeds.
The easy bread recipe that follows is a delicious one that you can make yourself at home in the weekend and enjoy it at breakfast , lunch or brunch!
A delicious bread with onions and herbs
(makes two half-kilo loaves )
- 1 kilo of flour for bread
- 24 grams dry yeast
- 2 big sweet onions finely chopped
- 1 cup extra virgin olive oil
- 1 tbsp of each dried oregano, rosemary and sage
- 2 tbsp sunflower seeds
Saute the onions in a shallow pan with a little olive oil.Add the herbs and set aside to cool.
Soak the dry yeast in a little lukewarm water.
Put the flour in a big bowl and make a hole in the middle.
Empty the mixed yeast and water and the olive oil and start mixing adding more lukewarm water until mix is firmer but still watery.
Preheat the oven to 180-190 C , preferably with air.
Empty onions with the remaining pan oil into the flour mixture and mix well.
Allow mix to rest for 20 minutes.
Empty mix in two non-stick cake forms 30×12 cm.each.
Bake for 50 minutes.
Allow breads to cool in the cake form for a few minutes before serving them with your best extra virgin olive oil.
